I love French fries but the calories keep me from enjoying this treat.
Making oven fries are a great alternative and you won’t miss the deep fried versions.
This is one of my favorite potato recipes. I use my home grown potatoes for these fries.
My grandchildren love french fries and they love these. We make them together and it is hard for them to wait til they are cooked.
All propose potatoes like Russets, All Blue and Kennebec are best.
I use Kennebec and All Blue for a fun colorful mix. The secret to these fries is double cooking similar to the basic fried version.
I use the micro wave for the first cooking this dose two things; one it precooks the potatoes and second, it dries the potatoes which help the oil and seasoning coat the fries.
Add some dipping sauces and these are a real treat or side dish.
2-3 Medium Potatoes
Preheat oven to 400 degrees F
Cut potatoes in half inch slices. Place potatoes in a microwave safe bowl. Microwave on high for 1 min. Stir potatoes. Microwave on high for 1 more minute. Remove from microwave and let potatoes cool.
Add 2 Tablespoons of oil to bowl of potatoes and mix with hands. Add salt and seasonings of choice to taste. Mix with hands again. Pour remaining 2 tablespoons of oil on a cookie sheet. Add potatoes to cookie sheet in a single layer.
Bake in 400 degree oven for 10 minutes. Remove from oven and stir potatoes. Return to oven and bake for 10-15 minutes more. Check for crispness. If potatoes need more time keep checking every 5 minutes until done to desired crispness.
We like ours lightly crisp with nice soft centers.
Remove from oven and serve immediately with your favorite dipping sauces or along side hamburgers or any main dish.
¼ cup mayonnaise
1 tablespoon catchup
1 teaspoon favorite barbeque sauce
Mix until blended.
Some times, not often I have left over oven fries. They are great served the next morning with some eggs and toast.
